If you don't mind the command line, gentoo is kind of fun and always stays up to date. For an easy-to-use, easy-to-setup system, Ubuntu is good too. I use both.

Also, I've emailed you about possibly GPLing your contributions to the PHPNuke->Drupal script so that I can release my additions to it. The other two authors have already GPL'd their stuff. Can you do the same?
